Borago This is my favourite restaurant in Santiago and really has changed the face of Santiago dining. They are very into local producers and source their products from local growers and farmers. They’re listed in the Top 50 restaurants in the world so you definitely need to book.
Bocanariz This restaurant is famous for it’s incredible wine list. Its located in the trendy Lastarria neighbourhood and has knowledgeable staff and an extensive wine list with lots of fantastic local Chilean wines.
Ambrosia This is my go to option for lunch with its stunning courtyard garden located in a house. If you go for lunch ask to sit outside. This restaurant has a bistro style feel to it and the chef, Carolina Bazan, has been named Chef of the Year for Chile and the restaurant appears in Top 50 Latin American restaurants.
Restaurant 040 Another restaurant that appears in the Top 50 Latin American restaurants. Barroso , the chef, is strongly influenced by his time working at El Bulli restaurant and hence the style of food is molecular gastronomy. You must make sure you leave time to explore Room 09-this is the secret rooftop bar next to the restaurant.
Karai This restaurant is located in the sleek W Hotel and is by the same chef as Maido Restaurant in Lima (one of the top 50 restaurants in the world ). Karai has many similar dishes to Maido with a nikkei influence (this is Japanese/Peruvian food).
